Ingredients

  • 1 1/2 tbsps Maple Syrup

  • 1 tbsp Extra Virgin Olive Oil

  • 1/2 tsp Cinnamon

  • 1 tbsp Fresh Sage (chopped)

  • Sea Salt & Black Pepper (to taste)

  • 2 cups Butternut Squash (peeled, seeds removed, cubed)

  • 1/4 cup Pecans

  • 1 1/2 tbsps Feta Cheese (crumbled)

Assemble It

  1. Preheat the oven to 375ºF (190ºC). Line a baking sheet with parchment paper.

  2. In a bowl, mix together the maple syrup, oil, cinnamon, sage, salt, and pepper. Add the butternut squash and mix well. Place the mixture on the prepared baking sheet and roast in the oven for about 10 minutes or until halfway cooked.

  3. Add the pecans to the baking sheet and toss everything together. Bake for another 10 minutes or until the butternut squash is soft and cooked through. Be careful to not to burn the pecans.

  4. Transfer to a serving plate. Top with feta cheese and enjoy!
