Ingredients
2 clamshells of spinach (it shrinks when cooked!)
2 heads of broccoli, finely chopped
2 green zucchini, diced
1 sweet onion, diced
1/2 cup chopped, pitted green olives (like Castelvetrano)
2 cups grated parmesan cheese (if you want more cheese, go for it!)
8 garlic cloves, finely chopped
2 lemons, juiced & zested
1 tsp kosher salt
2 tbsp extra-virgin olive oil
Red pepper flakes or Aleppo
Optional: add chopped basil over the top of the pizza, just before serving
Assemble It
Preheat oven to 400 degrees (or pizza dough instructions).
Zest the lemons, chop the spinach, broccoli, zucchini, olives, and cheese.
Chop garlic, toss in a lightly oiled saute pan until it starts to turn a light golden color.
Remove from heat and put in a bowl.
Roll out pizza dough in a square shape. Line a baking sheet with parchment paper. Assemble pizza.
Cook 15-25 minutes In the oven - depending on your crust. Pizza should be browned, bubbly, and look like a delivery pizza.

Buy pre-made, fresh pizza dough. Trader Joe's or Whole Foods are easy. You'll need two, as this makes two pizzas.
