Total time: 20 minutes 

Ingredients

  • 2 heads of romaine lettuce or pre-chopped romaine.

  • 2lbs ground beef

  • 1/2 package of Siete mild taco seasoning

  • 1 can of chopped tomatoes

  • 2 green zucchini, diced

  • 1/2 sweet onion, diced

  • 2 cups grated cheddar cheese (if you want more cheese, go for it!)

  • 1 tsp kosher salt

  • 2 tbsp extra-virgin olive oil

  • Optional: add chopped cilantro, just before serving

  • 1 avocado (optional)

Assemble It

  1. Chop romaine. Dice zucchini and onions.

  2. Bring out prepared Ingredients: tomato, romaine, cheese.

  3. Add olive oil to saute pan, when heated add in the onion and zucchini. Cook until softened. Add in tomatoes. Add in ground beef.

  4. Add in Siete taco seasoning, cook per package directions.

  5. Halve and cube a ripe avocado If using. Store the remaining avocado wrapped in a wet paper towel in the fridge to preserve.

  6. Assemble tacos that you're eating that day. Keep tortillas and taco mixture separate for leftovers.

Keep It Easy

Great leftover idea: Serve the meat and veggies over rice for a quick meal. Or add the meat and veggies into scrambled eggs for a flavorful breakfast.

Buy ready-made, tortillas. I like Siete or fresh flour tortillas. Toast them in a dry saute pan or open flame until they're warmed through for extra depth of flavor.
