Serves 4 

Total time: 25 minutes 

Ingredients

  • 2 bunches of kale or Swiss chard, stems removed and chopped

  • 3 packages of beef bone broth

  • 1 can of chickpeas, rinsed and drained

  • Chopped veggies: carrots, onions, mushrooms, and cherry tomatoes

  • 1 tsp kosher salt

  • Chopped Nut Thin crackers if you want a crunch with your soup (optional)

Assemble It

  1. Warm bone broth through.

  2. Add in chopped veggies and let the soup simmer untill veggies are cooked through.

  3. Add in chickpeas and greens, and cook about 5 minutes more.

  4. Add Nut Thins on top right at serving. 

Up the Protein

Add in one or a few from the below list:

  • 2, 6-minute eggs - left whole, dropped In the soup

  • Rotisserie chicken - taken off the bone and added into the soup

  • Banza chickpea noodles added directly to the bone broth
