A.P.P.L.E. Salad

Serves 4 

Total time: 6 minutes

Ingredients

  • 1 clamshell of arugula

  • 1/2 cup shredded parmesan

  • 1/2 cup of toasted pine nuts

  • 1 lemon, juiced & zested

  • 1 tsp kosher salt

  • 2 tbsp extra-virgin olive oil

  • If you have any herbs on hand - basil, mint, chives, parsley - chop & throw on top

Assemble It

  1. Use a vegetable peeler to shred the parmesan. Zest the lemon with a microplane. Chop the herbs if you're using them.

  2. Toast the pine nuts in a dry saute pan, stirring constantly. When you start to smell the nuts they are done, remove from the heat.

  3. Make the dressing. Juice the lemon, and add it to the olive oil. Add in salt. Mix and set aside.

  4. Assemble all ingredients and mix In dressing when ready to serve.

  5. Lasts one week (undressed) if covered in the fridge.
