Total time: 30 minutes 

Ingredients

  • ½ onion, peeled

  • 2 inch piece of ginger, roughly chopped, (no need to peel)

  • 1 ½ tablespoons garam masala

  • ½ cup red split lentils

  • 1 can of coconut milk (full fat)

  • Large bunch of coriander, finely chopped

  • 2 tablespoons olive oil, salt and pepper

Assemble It

  1. Place the onion and ginger in a food processor and pulse until very finely chopped. Transfer to a medium saucepan with 2 tablespoons of olive oil. Saute on a medium heat for 3-4 minutes, stirring occasionally.

  2. Add the garam masala and lentils. Stir to heat through and then add the coconut milk. Refill the tin with water and add to the saucepan. Simmer for 20 minutes, or until the lentils are soft and the dahl has thickened. Season well with salt and pepper, stir in the coriander and get creative with some garnishes if the mood takes you!

  3. For additional protein, add one or two tablespoons of Kite Hill Greek yogurt on top.
