Ingredients

  • 2 tbsp olive oil

  • 2 cups finely grated Parmesan

  • 1/2 cup panko bread crumbs

  • 1/2 cup finely chopped parsley (optional)

  • 1 tsp garlic, chopped

  • 1/2 tsp fine sea salt

  • 1/2 tsp ground black pepper

  • 2 lbs ground turkey

  • 2 eggs

  • 1 can of chopped tomatoes

Assemble It

  1. Preheat the oven to 400°F. Line a baking sheet(s) with parchment paper and drizzle the oil across the paper.

  2. In a large bowl, combine the Parmesan, flour, parsley, garlic, salt, and pepper. Add the turkey and eggs and use your hands to combine.

  3. Set aside for 15 minutes to absorb moisture. Use a spoon to scoop and your hands to form the meat into golf-ball sizes. Place the meatballs evenly spaced on the prepared baking sheet(s).

  4. Bake in the center of the oven for 20 minutes. Remove from the oven, flip each meatball, and return to the oven for 20 minutes, or until the meatballs are crispy and lightly browned. Serve over polenta and tomato sauce.

Keep It Easy

Buy pre-made, polenta in a tube. Slice as thick as your pinky. Place on a parchment-lined baking sheet, drizzle with chopped tomatoes, olive oil & and salt, and bake 350 until warmed through. Serve immediately.

Want more greens? Steam a clamshell of spinach, add garlic powder and lemon zest. Serve meatballs on top of greens, drizzle with olive oil for a healthy fat.
