Ingredients

  • 2 tablespoons extra virgin olive oil

  • 1 medium shallot, diced

  • ½ cup brown or white basmati rice, rinsed

  • 1 cup chicken or vegetable broth

  • 2 cups cauliflower rice, fresh or frozen

  • ½ lemon, zest and juice

  • 2 tablespoons freshly chopped parsley (optional)

  • Salt and pepper

Assemble It

  5. Store leftovers in an airtight container in the fridge for up to five days.
