Ingredients

  • 4 cups curly kale leaves, chopped

  • ¼ cup extra virgin olive oil

  • Juice of 1 lemon

  • ½ teaspoon sea salt

  • Optional - add garlic or my fav Whole Foods 365 Sesame Garlic Crunch (it makes everything awesome!)

Assemble It

  1. Preheat oven to 350.

  2. Cut kale from the ribs, leaving just the leaves.

  3. Place the kale in a medium to large mixing bowl.

  4. Add the olive oil, lemon juice, and sea salt and continue to massage until the kale feels soft, about three minutes. This breaks up the fiber and makes the kale more flavorful and easier to digest.

  5. Bake for 15-20 minutes, until crisp.

  6. Enjoy immediately or store in an airtight container for up to four days.

Keep It Easy

The key to making crispy chips is to not overdo the oil. Less is more.

Add the chips to rice or to ground meat for an added crunch and nutrition pop.
