Ingredients

  • 3 lbs Chicken Thighs (boneless, skinless, chopped)

  • 2 heads Cauliflower (medium, finely chopped)

  • 4 cups Baby Spinach (chopped)

  • 3 cups Plain Coconut Milk (from a carton)

  • 1/2 cup Nutritional Yeast

  • 1 1/3 tbsps Garlic Powder

  • 1 1/3 tbsps Onion Powder

  • 2 tsps Turmeric (ground)

  • 2 tsps Ground Sage

  • 2 tsps Sea Salt

Assemble It

  1. Preheat the oven to 350ºF (175ºC). Grease a casserole dish.

  2. Add all the ingredients to a large bowl, and mix well to combine. Add the contents of the bowl to the prepared casserole dish.

  3. Bake in the oven for 50 to 55 minutes. Let cool for 10 minutes before serving. Enjoy!
