Ingredients

  • 4 Yellow Potato (medium, quartered)

  • 3 Carrot (large, peeled, chopped)

  • 1 head Cauliflower (medium, cut into florets)

  • 2/3 cup Extra Virgin Olive Oil (divided)

  • Sea Salt & Black Pepper (to taste)

  • 2 cups Chicken Broth, Low Sodium

  • 1 Lemon (medium, juiced)

  • 4 Garlic (cloves, minced)

  • 4 lbs Whole Roasting Chicken

Assemble It

  1. Preheat the oven to 400°F (205°C).

  2. Add the potatoes, carrots, and cauliflower to a roasting pan. Drizzle half of the oil all over and season with salt and pepper. Toss to combine and then spread out into an even layer. Add the chicken broth to the pan, leaving about an inch of liquid all around the pan.

  3. In a small bowl, mix together the remaining oil, lemon juice, garlic, salt, and pepper until it emulsifies. Pat the chicken dry and place it on top of the vegetables, breast side down, in the roasting pan.

  4. Pour half of the marinade onto the chicken and rub it all over. Flip the chicken over and do the same on the other side. Put the lemon inside the open cavity of the chicken.

  5. Place in the oven and roast until the chicken is no longer pink at the bone and the juices run clear, about 75 to 90 minutes, depending on the size of the chicken.

  6. Let the chicken rest for 10 to 15 minutes before serving with the roasted vegetables. Enjoy!
